Congo Square was the one place in North America where every Sunday, free and enslaved Black people could gather openly, drumming, dancing, trading, and keeping alive the African cultural memory that everything else in the city tried to erase. What was preserved there became the roots of jazz, of Creole cuisine, of New Orleans itself. This blend reaches for that legacy: West African aromatics, warm with spice and smoke, deep and savory. Use it on grilled meats, stews, and rice dishes that want real depth.
