New Orleans doesn't cook like anywhere else in the South. It's a city built on layers, French and Spanish colonists, enslaved Africans and free people of color, Haitian refugees, Sicilian and Irish immigrants, and the Choctaw who were here first, all cooking in the same pot. Out of that came two great kitchens: Creole, the city's refined table, and Cajun, the country cooking the Acadians carried in from the bayou. New Orleans Proper is our love letter to both, the gumbo and the red beans, the filé and the trinity, the charm and the heat. A pinch of Creole magic, and a little bayou in every jar.
